Dinner

Ok...I am COMPLEATLY out of dinner ideas! I feel like I make the same meals all the time, and here are the reasons
1. My husband is picky, and alergic to some foods. He won't/ can't eat tomatoes (which I LOVE), he hates onions, pickles, olives, peppers, mushrooms, and many other things. And too many spices really set his heartburn and his stomach on fire.
2. Cooking for 2 is a pain in my...well you know. Portions are either way to big...or not big enough.
3. We don't mind eating leftovers...but just for about a day and then the food just sits in the refrigerator and goes bad and then I feel bad for spending money on food and then letting it go to waste.
4. Josh usually doesn't get home till about 7ish...so then we eat late and after that we clean up and then it's 8:30 or 9 before we get to spend any quality time together.
I know that I'm not the only one with these "problems", so if anyone knows any great, quick, healthy meals...I would love it if you would share! I'm not a great cook, but I'm willing to try new things...so any suggestions would be GREATLY appreciated. Thanks!

Two cookbooks that I really really like:
Williams-Sonoma new healthy kitchen "main dishes" (kinda crazy, but the "green" recipes are great.
and
Rachel Ray:365 No Repeats.
Really, in each there are only a few recipes that I couldn't live without. But they are really good ones.
Also, Women's Health this month has like 100 things to do to chicken breasts in just a few minutes. I haven't tried any yet, but I am definitely looking forward to it.
I usually just have broccoli and potatoes or pasta and chicken for myself so hopefully this will make things more interesting around here.
When my brother moved in, I had no idea how to cook for two! I learned that having a boy around is a lot more like cooking for 3!

one of my favorite quick meals but super yummy (a jeremy favorite from his mom actually) is stir fry. i boil chicken, stir fry brocoli, cauliflower, and carrots, and then make a sauce on top. if you're interested, let me know and i'll send you the recipe. make sure you leave me your email too cause i'm going private (if you haven't already... i have a really bad memory these days!) and then alice spring chicken is a good one too. let me know if you're interested and i'll send them you're way! and if you have any to share- i'm in a major rut too and would love some new recipes!
